
An interesting and unique dish: stuffed tomatoes with fresh cheese and seeds.

Ingredients:
4 tomatoes (OPG Loboda Stjepan)
200 g homemade fresh cow's milk cheese (Sirana Lenđel)
1 tbsp collard greens pesto (SMID)
1 egg (OPG IVO BLAŽEVIĆ)
homemade ground paprika (OPG Boris Marić)
A handful of toasted sunflower seeds (OPG KNEZIČIĆ BENJAMIN)
Olive oil (OPG Bodiš)
Fresh parsley for garnish
Salt and pepper to taste
Preparation:
1. Cut off the tops of the tomatoes and carefully scoop out the centers (save them to use later in a sauce, sataraš, or soup).
2. In a bowl, mix together the fresh cheese, egg, pesto, ground paprika, salt, pepper, and half of the seeds. Add a drop or two of olive oil if desired. The mixture should be creamy, but thick enough for stuffing.
3. Stuff the tomatoes with the prepared mixture, sprinkle with the remaining seeds, and bake in the oven at 180°C for about 25-30 minutes – until the tomatoes are slightly roasted and the filling sets.
4. Sprinkle a little ground paprika on top and garnish with a sprig of parsley. Serve for breakfast or as a side dish to a main meal!
