In the process of producing flour from cereal grains, starch is separated from the bran, initially creating semolina, which has a granular texture. This product is usually associated with wheat and maize, but semolinas made from other grains are now available on the market. In our production facilities, we produce high-quality semolinas from organically grown grains: wheat, spelt, barley, and maize. Semolina is an excellent source of energy since it is mainly composed of carbohydrates (it has a high GI, so diabetics should consume it in moderation), is a good source of dietary fibre, and contains the specific essential nutrient choline (also called vitamin B4), which plays a very important role in metabolic processes in the body; it affects the hypothalamic-pituitary-adrenal axis and is important for liver and brain function. Semolina reminds many of a favourite childhood food – sweet semolina cooked in milk with chocolate or fruit. This energy-dense and easily digestible food is quick and easy to prepare, offering countless culinary combinations.
