Fresh cow's cheese (OPG Božić) - 500g
Spinach (OPG Zoltan Varga) - 800g
Phyllo pastry for pies and strudels - one pack
Kajmak - 150ml
Butter - 50g
Vinegar - 3 tablespoons
Water (sparkling water or a teaspoon of baking soda in plain water) - 3,5dl
Oil - 3 tablespoons
Salt - 5g

In a bowl, whisk together the water, oil, salt, and vinegar, mix well, and set aside. Blanch the spinach, let it cool, chop finely, and mix with the cheese, kajmak, salt, and pepper. Add 2 tablespoons of the liquid mixture to each pastry sheet and spread with a pastry brush, place the filling along the bottom edge (not too much), and roll up.
Arrange the rolled pastry rolls into a buttered baking tray until it is completely filled. Brush the top of the pie with the remaining liquid mixture. Bake in a preheated oven at 200C for about 30min (do not open the oven during baking). When the pie is done, cover it with a damp cloth and leave it for about 15min on the kitchen counter.

Garlic and a glass of white wine pair perfectly with this combination.
