Vegetable soup with dumplings
Soup:
Soup pack - 2 pcs
Water - 1,5l
Salt
Pepper

Method:
Pour water into a pot, add salt and the cleaned, chopped vegetables. Once the vegetables are tender, remove them and blend in a blender (remove the bay leaf first). Return the blended mixture to the pot with the remaining cooking liquid and bring the soup to a boil.

Dumplings:
Semolina - 6 tbsp
Egg - 1 pc
Oil - 1 tbsp
Pinch of salt
Method:
In a deep plate, beat 1 egg, then add the semolina, oil, and a pinch of salt. Mix everything well and place in the fridge until ready to add to the soup. Drop small dumplings into the boiling soup using a small spoon (about ⅓ tsp each), let them simmer for about 10 min, and the soup is done.

Roasted baby potatoes
Baby potatoes - 1kg
Garlic - 1 clove
Onion - 1 pc
Fat (vegetable or animal)
Salt

Method:
Scrub the potatoes with a wire pad to remove any loose skin or blemishes, cut them into equal pieces, and dry thoroughly with paper towels. Preheat the oven to 220°C. In a bowl, toss the potatoes with fat and seasonings, then add the whole garlic clove and the onion cut in half. Bake the potatoes covered for 25 min, then take them out, give them a stir, and return to the oven uncovered for another 15 min or so, until golden brown.
Baby spinach with milk
Baby spinach - 1kg
Garlic - 7 cloves
Whole milk - 1dl
Cream - 2 tbsp
Salt
Pepper
Method:
Wash the spinach and trim off the thick stems, then finely mince the garlic. Sauté the garlic in a little fat (do not let it burn) and add the spinach. Once the spinach wilts and most of its liquid evaporates (about 10 min), add the milk, salt, and pepper. Sauté until smooth and well combined, then stir in 2 tsp of cream.

Button mushrooms with semi-hard cow's cheese
Button mushrooms - 1kg
Onion - 2 pcs
Semi-hard cow's cheese - 200g

Method:
Clean the mushrooms by separating the caps from the stems. Blend the stems in a blender and set the caps aside.

Sauté the onion in a tiny bit of fat and add the blended mushroom stems, along with the seasonings (salt, pepper, and nutmeg). Once the mixture comes together, stuff the caps and top each with a piece of cheese.

Bake in a preheated oven at 200°C for about 30 min.
