Put the cauliflower to boil in salted water and let it overcook. In the meantime, fillet the fish (you'll need a sharp knife) and remove the bones.


Cut the fillets into finger-thick strips, salt them, and coat them in chia seeds. By this time the cauliflower is cooked; drain it, add a touch of salt, sugar, olive oil, and butter, and blend into a smooth cream. Set the cream aside and cover with foil so it doesn't cool down. Pour olive oil into a pan, and once hot, add the fish and fry for a few minutes on each side. Place the fried fish on a paper towel to drain excess oil, season with pepper, and arrange on a plate with the cauliflower cream.

You can also use other types of fish (e.g., tuna, sea bass, catfish...). If the fish was frozen, pat it thoroughly dry with a paper towel.
