Baked Sweet Potatoes with Bacon and Onion

Ingredients: 

Sweet potato (OPG Šestanj) - 2 kom
Bacon (OPG Rudež) - 2 slices
Red onion (OPG Mikić) - 1 kom
Hazelnut oil (Sedlaček) - or another cooking fat
Parsley leaves (OPG Ivana Debelić)
Fresh cow's milk cheese (OPG Božić)
Salatina mix
Crushed chili flakes

Preparation process:

Wash the sweet potatoes well and cut them in half lengthwise. Brush the top flat side with oil. Preheat the oven to 180 °C. Place the sweet potatoes on a baking tray and pop them in the oven for 30 min. Top the sweet potatoes with the onion and bacon and return to the oven for about 15 min. When the sweet potatoes are done, drizzle them with hazelnut oil and sprinkle with parsley.

Serve this dish alongside a mixed salad and fresh cheese seasoned with hot ground pepper.
