
Potato and broccoli nests with feta cheese and baked eggs are a simple, delicious, and nutritious meal that is easy to prepare and looks great on the plate. A perfect combination for breakfast, lunch, or a light dinner.

Ingredients:
350 g or 4 medium potatoes (OPG Klara Boris)
240 g or 2 heads of baby broccoli or 1 large head of broccoli (OPG Dumančić)
60-70 g feta cheese (OPG Božić)
4 eggs (OPG Marijana Ileš)
1 tsp olive oil (OPG Bodiš)
salt and pepper
dill or other fresh herbs for garnishing

Method:
1. Dice the potatoes and put them on to boil.
2. Add the baby broccoli for the last 3-4 minutes of cooking.
3. Drain well, then mash them together.
4. Stir in the crumbled feta and add a tiny pinch of salt if needed, as the feta is already quite salty.
5. On a sheet of baking paper, shape four nests with a well in the centre.
6. Lightly brush them with olive oil, then crack an egg into each nest.
7. Season with pepper and bake in a preheated oven at 200°C for about 15-20 minutes, depending on how firm you like your yolk.
Finally, sprinkle with fresh herbs and enjoy!
