It all started because we didn't want to sell our lavender for such a low buy-back price. So we searched for
a high-quality product to make using our blackberries and lavender. I found a recipe for flavoured vinegar from
a producer who stated in the description that the recipe came from St. Hildegard (I haven't found proof of this yet, but
I don't think they would make it up). There are only 5 producers in Europe (and only a couple also make balsamic vinegar from this
combination, which sells for 500,-EUR/0,5 l).
This is a gourmet vinegar that is used sparingly. One small spoon is enough for one salad. Not
because it is sour, which it isn't, at approx. 5% acidity, but because the combined aroma of blackberry and lavender is up to 5 times stronger when
brought together (depending, of course, on the year and the amount of sunshine). What sets us apart from competitors is that
we don't grow a monoculture; instead, we use up to 40 different permaculture blackberry varieties for production. Do not store in the fridge. This vinegar can be used for any salad, savoury or sweet.
After producing this clear vinegar, blackberries and lavender remained, so we used them to create a thick vinegar
where the whole blackberry and lavender are blended without seeds (like thick orange juice). The vinegar is
twice as sour, over 7% acidity, but it contains pieces of blackberry and lavender (place in the fridge after opening) and acts like a concentrate of the clear vinegar.
We were delighted when „Plava kamenica“ recognized the quality of our vinegar. They secretly tested
60 Croatian gourmet vinegars and declared ours one of the three finest in Croatia.
