Wipe the mushrooms clean with a damp cloth if needed and slice them thickly. Heat a small amount of olive oil in a pan, add the sliced mushrooms, and fry until they release their excess moisture and turn a nice brown colour. Season with salt and pepper right at the end so the mushrooms don't release too much liquid.

Next, prepare the rest of the ingredients. Grate the smoked garlic cheese, and beat five eggs in a bowl with a fork, adding salt and pepper. Cook the beaten eggs over low heat in a small amount of olive oil, stirring constantly. Remove the eggs from the pan just before they are fully cooked, as they will finish cooking when we toast the assembled tortillas.

Once the mushrooms and eggs are ready, you can start assembling the tortillas. Spread a thin layer of Borg hot sauce over an open tortilla, followed by a layer of the cheese spread / sour cream. Next, add a few spoonfuls of cooked eggs and mushrooms, top with the grated smoked cheese, and roll it up.


Toast the rolled tortillas in a pan for about a minute on each side, after which they are ready to serve.

Before assembling, warm the tortillas in the microwave so they soften up and won't tear when rolling. You can also make a meat version of this dish, but be sure to cook the meat before wrapping it with the other ingredients in the tortilla.
