Coarsely chop half a head of Savoy cabbage and salt it. Dice the garlic and onion, then sauté them in olive oil over low heat with salt and pepper. After about ten minutes of sautéing, add the Savoy cabbage to the onion and garlic mixture and continue sautéing until the cabbage softens.

Peel the potatoes, slice them thinly, and salt them. Whisk two eggs, 2dl cream, and 2dl milk thoroughly with a fork. Add salt, pepper, and a pinch of ground nutmeg to the egg, cream, and milk mixture. Stir well and set aside.

Oil a baking dish on all sides and begin assembling the bake. Layer a row of potatoes, then a row of Savoy cabbage, pouring some of the egg, cream, and milk mixture over each individual layer.


Bake covered with aluminum foil at 180°C for 45 min. While the bake is in the oven, grate 250 g of smoked cheese. After 45 min, remove the foil and cover the bake with the grated smoked cheese. Return it to the oven for an additional 15 min to melt and brown the cheese.

Take the finished bake out of the oven and cover it with a clean kitchen towel. Let it rest covered for at least 30 min before slicing and serving.

If you like, you can swap the Savoy cabbage in this recipe for other vegetables, such as roasted peppers, thinly sliced zucchini, or eggplant.
