Organic shallots. A special onion variety traditionally grown along our coast.
The bulbs are used sautéed in risottos, for mushroom sauces, as an addition to rustic roast potatoes, and are most often used fresh in various salads.
In Dalmatia, they are traditionally pickled in wine vinegar: the shallots are cleaned so that one dry outer layer remains, packed tightly into a jar, and covered with wine vinegar in which a little salt and sugar has been dissolved. They should stand for at least a month on a windowsill that gets sun only until noon. After that, the shallots are stored in the pantry.
They are enjoyed throughout winter alongside cheese, prosciutto, bacon...
The shallot vinegar is used for marinades and green salads.
