🥕 What to do with past-its-prime and unappealing fruit and vegetables? Use it, don't waste it! 🍎

 

One common mistake we make due to a lack of creativity is throwing away fruit and vegetables that can still become something delicious and useful.
We forget that „imperfect“ ingredients have potential, not only to feed us, but to give us an opportunity for a quick, healthy, and creative meal.

We can use these vegetables in various ways by preparing soups, stews, sauces, or roasted vegetable bites, or even in less healthy ways, such as deep-frying them.

The key is not to throw things away, but to choose wisely and cook with intention !

 

 

 

♻️ Food is not waste – food is an opportunity

 

Vegetables that have lost their shine but aren't spoiled are still completely safe to eat. Some of their nutritional value may have decreased, but that doesn't mean they can't serve as a great base for a warm, comforting, homemade meal.

For example, older spring onions are a perfect addition to a hearty stew. Wrinkled zucchini, wilted Swiss chard, or soft tomatoes can all become the key ingredient for your next lunch or dinner.

🍽️ Here is how to use older vegetables:

 

🥣 1. Cream soups and stews

Perfect for soft, wrinkled, or wilted vegetables. Just cook, season, and blend. Nobody will know it wasn't fresh from the market.

 

🍝 2. Sauces for pasta, pizza, or rice

Old vegetables can be sautéed, roasted, or blended into rich sauces packed with flavor and aroma.

 

🧆 3. Vegetable patties or fritters

Mix finely chopped vegetables with eggs, seasonings, flour, and/or breadcrumbs. A simple recipe for delicious homemade, crispy bites.

 

🥧 4. Fillings for pies, quiches, and strudels

Use leftover zucchini, spinach, onions, or mushrooms as a juicy filling for savory dishes. You can blanch them or lightly pan-fry them before using.

 

🥗 5. Pickling and fermentation, also known as turšija

If the vegetables are still safe to eat, fermentation is a great preservation method for fans of pickled foods.

 

🍲 6. Vegetable stock

Use all leftovers and scraps to make a homemade stock that's perfect for soups, risottos, and sauces.

 

 

 

 

🍳 7. Omelettes and sandwiches

Quickly use vegetable leftovers in omelettes or as an addition to sandwiches/wraps, perfect for a zero-waste breakfast.

 

🍜 8. Cooked vegetables for unique pasta doughs and croquettes

You can boil the vegetables first, blend them, add flour, and season to taste. Use this mixture to shape homemade pasta dough or croquettes, which you can then boil or lightly fry in oil.

 

🫕 9. Curry or stir-fry

Quickly fry vegetables with spices in a wok or skillet. A meal ready in 10 minutes, with zero waste. 

 

 

🍓 And what about fruit that is nearing its end?

Wrinkled apples, overripe peaches, soft pears? Instead of throwing them away, we can turn them into something sweet and homemade:

 

1. 🍰 Quick fruit strudel

Chop the fruit, season with a little cinnamon, sugar, and lemon juice, roll in pastry dough, and bake. A perfect zero-waste dessert.

 

2. 🍯 Homemade jam, topping, or homemade gummy candies

Cook the fruit with a splash of water and sweeten to taste. If you want jam, leave fruit chunks for a richer texture. If you'd like to make healthy gummy candies, add gelatin, stir well, pour into molds, and let cool.

 

3. Fruit-flavored whipped cream 🍓

·        Cooked fruit turned into a sauce is a fantastic addition to whipped cream. Simply fold it in gently to get whipped cream with a natural fruit flavor. Ideal for warm drinks, cakes, or fruit desserts.

 

 

 

 

 Conclusion: Ugly isn't necessarily bad – often it's just an opportunity to get creative in the kitchen!

 

Food doesn't have to look perfect to be delicious and wholesome. Let's use everything we have, reduce waste, and restore respect for the ingredients that travelled a long way to reach our kitchens.  In our case, perhaps a shorter journey, since we are part of a short supply chain, but the effort to grow them was still just as great.

So let's show gratitude to everyone who invested their effort and time so that we could enjoy the fruits of their labor.

 

All you need is a bit of creativity, a pinch of spice, and a willingness to try—sometimes that really is all it takes.
