
Broccoli in a good light 😃🥦

Milk - cow's (OPG Božić) - 100ml
Broccoli (OPG Loboda Stjepan) - 1 head
Olive oil (OPG Dario Dješka)
Tablespoon of dried chives
Onion - 1 piece
Tablespoon of butter
Teaspoon of vegetable stock powder
Salt
Pepper


Dice the onion and sauté it in a pot with olive oil (2-3 tbsp) for about 10 min. Add a pinch of salt.
Wash and chop the broccoli, discarding the leaves and the tough end of the stem, and cut the rest into smaller pieces (florets). Sauté together with the onion for about 5 min, then cover everything with water and add a teaspoon of vegetable stock powder (a seasoning mix like Vegeta). Cook everything together until the broccoli softens (about 15 min or so).
Strain the vegetables from the pot, keeping the stock water the broccoli was cooked in off to the side.
To the strained broccoli and onion, add a tablespoon of butter, 1/2 tsp of salt, and a bit of pepper. Stir everything together and purée with a stick blender until smooth. (If you don't have a stick blender, you can use a regular blender).
Gradually add the cooking water to the blended broccoli until you reach your desired thickness, then add 100ml of milk. Stir everything together and return to the heat for another 10 min or so. Add a tablespoon of dried chives, and add more salt and pepper to taste.
