DOUGH
Flour - 600g
Baking powder - 1 sachet
Butter or margarine - 200g
Sugar - 50g
Salt - ½ teaspoon
Milk - ¼ litre
FILLING
Apples - peeled and grated (OPG Mikić) - 1500g
Hazelnuts (OPG Ante Barić) - toasted and coarsely chopped - 100g
Sugar - 125g
Grated lemon zest
Lemon juice - 4 tablespoons
Raisins - 100g
Cinnamon - 1 tablespoon
SPREAD
Egg yolk (OPG Pavlović) - 1 pc
Apricot or orange jam (OPG Stipino) - 200g
A little water
GLAZE
Icing sugar - 100g
Lemon juice - 2 tablespoons
Knead all the ingredients (sift the flour together with the baking powder) into a smooth dough and leave it to rest in a cool place. Prepare the apple filling using all of its ingredients. Roll out ¾ of the dough and place it into a greased and floured baking pan. Spread the filling over it. Then make a lattice out of the remaining dough. Brush the lattice with the egg yolk beaten with a teaspoon of water. Bake in a preheated oven (30 min at 200°C).
Once cooled – warm up the jam with a little water to get a thick mixture and brush it over the lattice and edges of the cake. Finally, prepare the glaze from icing sugar and lemon juice – simply stir them together until thick and smooth. Decorate the lattice with the glaze, drizzling it off a teaspoon.
