Yes, we know… we all love asparagus, and their season here is far too short. :(
That’s why freezing them while they are still around is a smart move, saving a little bit of spring for later. Here is how you can freeze asparagus:
Step 1. Wash them and trim off the hard, woody lower part.
Step 2. It is best to blanch them briefly: thin asparagus: 1-2 minutes, thicker asparagus: 2-3 minutes
Step 3. Immediately transfer them into ice-cold water to stop the cooking process.
Step 4. Drain them well and dry them completely.
Step 5. After that, transfer them to freezer bags or containers and label them with the date.
Stored this way, they can last for about 6–12 months.
When you are ready, it is best to use them straight from the freezer for soup, risotto, pasta, or sautéing.
