
Production of dried local pasta with flour made from bread wheat, spelt, rye and buckwheat, and fresh free-range eggs.
The business, MILABI tjestenine, was launched in November 2022 with the help of self-employment grants. The idea to start the business—specifically for pasta production—grew out of a hobby, but also partly out of tradition. Raw materials, namely bread wheat flour and eggs, are sourced from certified and trusted producers, while as a family we grow organic spelt, rye and buckwheat, grinding these same grains on an organic natural stone mill, which gives us an extra boost in our work. We also own a professional Italian machine and dryer, enabling us to produce a significant amount of pasta in a single day.
Here are some interesting facts about the grains we use!
SPELT is an ancient wheat, organically grown, and a healthier diet option as it contains very little gluten. It boasts an impressive amount of fibre, has a beneficial effect on digestion, features a mild and refined flavour, and is recommended for the elderly, the infirm, and children (PEOPLE ALLERGIC TO COMMON WHEAT PRODUCTS CAN CONSUME SPELT PRODUCTS IN MODERATE QUANTITIES).
RYE has a distinctive dark colour and a robust flavour, is rich in fibre and protein, has a higher nutritional value than wheat, and helps regulate and improve blood glucose levels.
BUCKWHEAT is an ingredient almost unknown to many; it is gluten-free, rich in dietary fibre, and contains eight essential amino acids. It is rich in minerals (phosphorus, magnesium, iron, zinc, copper and manganese), is beneficial for people with diabetes, and helps reduce high blood pressure and cholesterol.
