Shiitake (lat. Lentinula edodes) are mushrooms native to Southeast Asia, highly valued for their culinary flavour and aroma, and above all for their use in traditional medicine.
From these mushrooms, we obtain an active substance called Lentinan, a backbone of beta-glucans, which strengthens immunity, lowers and regulates cholesterol, and helps with diabetes, allergies and cancer. Shiitake contain numerous minerals such as potassium, calcium, iron and magnesium. The mushroom also contains vitamin D, whose primary role is to maintain stable cellular processes and keep plasma concentrations of calcium and phosphate constant.
Shiitake are very rich in molecules with various benefits, but with different molecular structures that cannot all be extracted using a single method. For this reason, a dual extraction is performed, as some molecules are water-soluble while others are alcohol-soluble, achieving the best extraction results.
